    Origin Details:

    Farm: El Oasis, Fernando Bocanegra

    Region: Ortega-Tolima, Colombia

Altitude: 2,150 meters above sea level

    Farm Size: 14 hectares

    Process:

Fernando Bocanegra employs a meticulous natural process to capture the essence of his Gesha beans:

    1. Selective Harvesting: Only the ripest cherries are handpicked and hand-selected, ensuring peak quality.

    2. Floating Selection: Cherries are submerged in water; any floating cherries and debris are removed for a cleaner profile.

    3. Anaerobic Fermentation: The cherries undergo a 12-hour anaerobic fermentation in a controlled tank at 20°-22°C, amplifying flavor intensity.

    4. Slow Drying: Finally, they are dried in marquesinas for 18-20 days, stirred four times daily to achieve an even, stable drying process.
