    Sourced from the Bella Vista farm in the Pitalito municipality of the Huila region in Colombia, this coffee offers a unique flavor profile that is sure to satisfy even the most discerning coffee connoisseur. With an altitude of 1,540 meters above sea level and grown in an area of just 6 ½ hectares, this coffee has a distinct flavor that features notes of caramel, honey, and chocolate.

    Taste description: This coffee is complex and intense with notes of tangy apricot, sweet caramel and honey, perfectly balanced and complemented by a sweet and long chocolat aftertaste.

     

    Amount: Our specialty coffee bags come in 250 grams of whole beans roasted with filter brewing in mind. We roast, pack, and ship on demand, ensuring maximum freshness for our customers.

     

     

    The process:

     

    1. Carefully selecting the cherries.
    2. The cherries undergo an anaerobic process within sealed plastic bag for approximately 60 hours, with a temperature of 20°C.
    3. Allowing the cherries to oxidize for 3-4 hours after opening the bags.
    4. Pulping the cherries.
    5. A second 60-hour anaerobic process within a sealed plastic bag.
    6. Washing the beans with a small amount of water and rapidly stirring them to remove the mucilage.
    7. Drying the beans in marquesinas for 12-18 days.

     

     

     

    Story: Jonathan Gasca, a young traditional coffee farmer, was born and raised in Pitalito, the department of Huila in southern Colombia, which boasts the highest coffee production in the country. His family had been dedicated to coffee farming for generations, but they focused on producing quantity rather than quality to ensure a steady income.

     

    Despite being born into a family of coffee farmers, Jonathan's childhood dream was to become a professional soccer player. Together with his brother Johan, he went to train with Deportivo Cali, a professional team in Cali. However, things did not work out as they expected, and they decided to return home. His mother encouraged him to pursue a career in radiology, but Jonathan had no interest in that field. Instead, he applied to study ecological agricultural and livestock production, knowing that this would provide him with more opportunities on the farm.

     

    In 2008, Jonathan and his uncle and brother began experimenting with planting specialty coffee, which was a new concept at the time. However, their first attempt was rejected by the SKM cooperative due to the coffee's appearance. Despite this setback, Jonathan remained determined to produce specialty coffees and continued to learn and experiment.

     

    Motivated by the Lasso family, who are well-known for their excellent specialty coffees, Jonathan dreams of achieving worldwide recognition for his coffee. He and his brother aim to continue their family tradition and uphold the good reputation of the product that has given them everything in life: coffee.
