    Jonathan Gasca, is a young and very progressive coffee farmer, raised on the farm in Pitalito in the department of Huila in southern Colombia. With careful attention to detail and a passion for producing some of the finest specialty coffee beans in the region, Jonathan Gasca and his team have developed a process that yields exceptional results with every cup.

    • STEP 2. FERMENTATION ANAEROBIC IN PLASTIC BAG FOR 4 DAYS IN SHADE
    • STEP 3. WASH WITH LITTLE WATER TO REMOVE IMPURITIES
    • STEP 4. DRYING IN THE SUN FOR 5-8 DAYS DEPENDING ON THE CLIMATE, THE GRAIN IS REMOVED 4 TIMES A DAY
