About the Wush Wush Varietal: The exotic Wush Wush varietal, reminiscent of the famous gesha varietal, traces its roots to Ethiopia. Named after the coffee-growing region Wush Wush in Ethiopia, it found its way to Colombia 30 years ago. Wush Wush is renowned for its low-yield and exceptionally refreshing, fruity flavor profile. Sipping on this coffee is like a glass of fresh, vibrant juice.
About Finca El Placer: Owned by 4th Generation Coffee Producer Sebastian Ramirez, Finca El Placer ("The Pleasure Farm" in English) is nestled in the heart of El Eje Cafetero, the Coffee Region of Calarca, Quindio. Sebastian's commitment to innovation is reflected in his use of a microbiology lab to craft unique and specialty coffees.
The Unique Process: At Finca El Placer, the coffee-making process is nothing short of artistry:
Step 1: Cherries are meticulously picked and selected, ensuring a perfect ratio of 95% ripe and 5% semi-ripe.
Step 2: The cherries undergo an anaerobic process in 200-liter tanks for a remarkable 280 hours, all maintained at a constant temperature of 18°C. CO2 injection is combined with 5 liters of coffee must (the juice extracted during the oxidation/fermentation processes), sourced from a previous maceration of coffee cherries.
Step 3: In the first drying phase, the beans are carefully dried in marquesinas at a controlled temperature of 40°C with 25% relative humidity for approximately 20 days.
Step 4: The second drying phase involves marquesinas with shading tarps for approximately 5 days, ensuring a slower and more controlled drying process.
Step 5: Finally, the beans are packed in Grain Pro bags and left to stabilize for 15 days, allowing the flavors to mature and harmonize.
