This new lot from Cajamarca, Peru brings together the dedication of two producers—Dilmer Silva and Marino Tello—and two classic varieties: Red Caturra and Yellow Pache.
Grown at 1,900 meters in the Callayuc district, the cherries are first fermented in bags for 24 hours, then undergo another 4 to 5 days of fermentation after depulping. Drying takes place on flat beds with a double canopy, a slow and careful process that lasts up to 10 days depending on the weather.
In the cup:
Expect soft white florals, mature plums, and yellow fruits. A note of sweet almond ties it together, finishing with a clean, bright acidity.
This is a balanced and expressive Peruvian coffee—layered, seasonal, and thoughtfully processed.
Producer highlights:
Dilmer grows his coffee in La Palta, surrounded by guava, pine, orange, and avocado trees. He works closely with his harvest team to ensure only ripe cherries make it into the batch. Outside of harvest, he builds nurseries and prepares the next generation of coffee trees.
Marino farms three hectares in Cutervo with a mix of Caturra, Catimor, and Bourbon. His days start early and end with carefully transporting his harvest by horse or truck. His focus: precision, cleanliness, and quality. He’s already planning upgrades like solar drying and advanced processing equipment to keep improving.
