    Cherries are organically grown by smallholder farmers and dried on raised beds at the Sawana station.


    Taste Description

    Strawberry cake, nectarines, vanilla, black tea, silky mouthfeel, exotic fruit finish.

    Expect a fruit-forward cup with a confectionary aroma and jammy red fruit notes. The sweetness of ripe nectarines and fresh strawberries leads into soft vanilla and black tea florals. A silky body carries through to a tropical finish with lingering notes of passionfruit and lychee.

     

    Backstory

    The Sawana drying station, nestled in the forested hills of Shakiso, was built in 2022 by Ture Waji—also known as “The King of Guji.” Before its establishment, cherries from Bookkisa and Shoondhisa were processed at a single site, making it difficult to isolate the unique profiles of each micro-region. With Sawana, Ture now works directly with around 30 smallholder farmers to produce traceable lots that highlight Bookkisa’s distinct identity.


    “Since establishing Sawana, we’ve been able to focus more precisely on the unique character of Bookkisa,” says Ture.


    Farming in Ethiopia looks very different from Latin America. While the average farm size here is around 2.5 hectares—technically larger than in Colombia—the planting density is far lower. Most producers harvest from semi- or fully forested systems with low input and low yield. The national average is just 0.8 kg of cherry per tree per year. What it lacks in volume, Guji delivers in clarity, sweetness, and depth. All cherries delivered to Sawana are organically grown.
