Orange Blossom · Jasmine · Raspberry · Peach Candy · White Grape · Earl Grey · Honey
The new 2026 harvest from one of Panama's most celebrated Gesha producers.
Why we selected it
We selected Catalina for its remarkable balance of expressive fruit, delicate florals and exceptional clarity.
Orange blossom and jasmine introduce the cup, followed by raspberry, peach candy and white grape. Despite its natural processing, the coffee retains the elegance and precision we look for in the finest Panama Geshas.
What makes Catalina particularly memorable is its finish. As the fruit gradually fades, Earl Grey tea and honey emerge, leaving a beautiful, lingering sweetness.
Why this coffee is significant
The new 2026 lot of Catalina continues a remarkable legacy at Finca Auromar.
Led by Roberto Brenes and the Auromar family, the estate has earned three first-place finishes at the prestigious Best of Panama competition, in 2013, 2016 and 2022.
These achievements have established Auromar among Panama's most respected Gesha producers.
Catalina represents the expressive side of their expertise: a naturally processed Gesha that combines generous fruit sweetness with the refinement and clarity that define exceptional examples of the variety.
The cup experience
The cup opens with orange blossom and jasmine, followed by vibrant raspberry, sweet peach candy and delicate white grape.
As it cools, the fruit becomes softer and more nuanced, revealing an elegant Earl Grey tea character and lingering honey sweetness.
Floral, expressive and beautifully structured, with remarkable clarity from beginning to end.
Producer and place
High in Piedra Candela, Chiriquí, Panama, Finca La Aurora sits within a protected highland tropical forest.
Of the estate's 30.5 hectares, just 14.5 are dedicated to coffee cultivation. The remaining land is preserved as forest, creating a natural environment that supports biodiversity and provides shade for the coffee trees.
Roberto Brenes and the Auromar family have spent years refining their approach to Gesha, combining careful cultivation with a long-term commitment to quality, sustainability and the people working on the estate.
Processing and its effect on the cup
Catalina is naturally processed, with ripe cherries dried intact to develop additional fruit sweetness and complexity.
The result is an expressive combination of raspberry and peach candy, balanced by the floral delicacy that makes Panama Gesha so distinctive.
What impresses us most is how clearly the variety's character remains present throughout the cup.
How we brew it — Double Bloom
Our recommended starting recipe for Catalina is designed to preserve its florals while bringing forward its fruit sweetness and tea-like finish.
15 g coffee · 250 g water · 92°C
-
00:00 — First bloom to 50 g
-
00:30 — Second bloom to 100 g
-
01:00 — Pour to 250 g
-
02:30–03:00 — Target total brew time
Grind: Medium-fine, adjusted to taste and time.
The two-stage bloom encourages even saturation and controlled extraction. We favour a slightly lower brewing temperature to maintain Catalina's delicate florals and clean finish.
This is our recommended starting point, to be fine-tuned for the 2026 roast.
Our recommendation
Catalina is a beautiful choice for those who appreciate the fruit expression of a natural Gesha without sacrificing elegance.
We recommend enjoying it slowly as a filter coffee, allowing the flavours to develop as the cup cools.
A remarkable 2026 release from one of Panama's most accomplished Gesha producers.
