Honey Gesha · Hacienda La Esmeralda · Panama
The coffee that stopped us this harvest.
Every season, there is a coffee that stays with you after the table is cleared.
For us, this year at Hacienda La Esmeralda, it was León 6HC.
A honey-processed Gesha from the León plot at Cañas Verdes, this was the most stunning Esmeralda lot we tasted from the new harvest.
Floral, elegant and remarkably expressive, with the clarity that defines great Esmeralda Gesha and an added depth of sweetness and texture from the honey process.
Among all the lots we tasted, this was the one we kept coming back to.
The Coffee
León 6HC is a coffee of extraordinary refinement.
The aromatics are immediately floral and lifted, followed by ripe stone fruit, fresh citrus and a deeper fruit sweetness underneath.
As the coffee cools, it continues to unfold. The florals become more pronounced, the fruit more transparent and the sweetness increasingly persistent.
The honey process adds texture and depth without compromising the delicacy of the Gesha.
Floral. Silky. Intensely sweet.
A coffee with remarkable presence, but no unnecessary weight.
León
León is one of the individual plots within Cañas Verdes, part of Hacienda La Esmeralda.
It is an established name within Esmeralda's production and has appeared as a separately harvested plot throughout the estate's auction history.
That separation is fundamental to the Peterson family's approach.
Rather than thinking of Esmeralda Gesha as a single coffee, individual plots and harvests are kept apart, allowing differences in elevation, exposure, maturity and processing to become visible in the cup.
León 6HC is one of those individual expressions.
The Honey Process
For this lot, the Gesha is processed using the honey method.
After harvesting, the skin of the coffee cherry is removed while part of the sweet mucilage surrounding the seed remains. The coffee is then carefully dried with that mucilage intact.
The result occupies a beautiful space between washed and natural Gesha.
There is the floral transparency and precise acidity we associate with a great washed Esmeralda, but with additional sweetness, texture and fruit.
In León 6HC, nothing feels added for effect.
Processing simply gives another dimension to the Gesha already there.
Hacienda La Esmeralda
Hacienda La Esmeralda occupies a unique place in modern coffee.
When the Peterson family presented their separated Gesha lot at the 2004 Best of Panama, its jasmine-like aromatics and extraordinary clarity introduced much of the coffee world to what this variety could become at high elevation in Panama.
That discovery didn't simply create one famous coffee.
It changed how producers and buyers thought about variety, terroir and individual plots.
Today, Rachel Peterson and the Peterson family continue to explore those differences with extraordinary precision.
And that is what makes León 6HC particularly exciting for us.
More than twenty years after Esmeralda changed the trajectory of Gesha, their coffees can still surprise us.
It doesn't need to reinvent Gesha.
It reminds us just how beautiful Gesha can be.
