This coffee is sweet and balanced, opening with soft stone fruit notes—think apricot and yellow plum—layered with milk chocolate and a gentle acidity. The cup finishes long and juicy, with a clarity that reflects the high-altitude terroir of Huila.
Story: Colombia Excelso Organic – Huila
Colombia is a country of immense diversity—geographically, culturally, and linguistically. It is home to over 68 ethnic languages in addition to Spanish, and even English in one of its island archipelagos. The landscape spans from the depths of the Amazon Rainforest to the peaks of the Andes mountains and was once the world’s largest producer of washed coffees. These coffees come from three main regions, naturally divided by the Andes.
Colombia is widely regarded as one of the finest coffee-producing countries in the world. The Huila department, located in the southwest near the Pacific Coast, is especially known for its complex flavour profiles. Coffee here is harvested between October and February.
Most producers in Huila are smallholder farmers, each cultivating just 1–2 hectares of land. Their ripe cherries are handpicked and delivered to central processing facilities for quality control and consistency.
At the mill, cherries undergo flotation to remove underripes and debris, followed by pulping and a controlled fermentation period of 8–14 hours. The beans are then washed and dried either on patios or in mechanical guardiolas to reach a stable moisture level of 10–12%. Once dried and stored in parchment, the coffee is milled and graded for export. Screen sizes 15–16 are classified as Excelso.
