    We selected this Chiroso from Heiner Lasso because it represents one of the most compelling directions in modern Colombian coffee. His coffees combine thoughtful farming with measured innovation, producing cups that are expressive without losing the clarity that makes great coffee memorable. Rather than using fermentation to dominate the profile, Heiner uses it to reveal more of what the variety already has to offer.

    The result is a coffee that feels remarkably transparent despite its complexity. Jasmine and bergamot lead the cup, followed by white peach and ripe mandarin. Wild honey brings gentle sweetness, while delicate tea-like florals carry through a silky texture into a long, refined finish. It is elegant, vibrant and quietly persistent.

    Heiner Lasso produces this coffee at Finca La Dinastía in San Adolfo, Huila, where his family’s work has established them among Colombia’s most respected specialty coffee producers. Their commitment to careful cultivation and precise post-harvest practices has made their coffees sought after by roasters and competitors around the world.

    This lot is produced from the Chiroso variety using a carefully controlled anaerobic washed process. Ripe cherries are selectively hand-picked before undergoing fermentation in a low-oxygen environment. The coffee is then depulped, washed and slowly dried under controlled conditions, creating greater sweetness and aromatic depth while preserving the precision and clarity expected from an exceptional washed coffee.

    Chiroso has become one of Colombia’s most celebrated varieties. Once believed to be exclusive to Antioquia, ongoing genetic research increasingly suggests Ethiopian landrace ancestry, offering an explanation for its remarkable floral aromatics, citrus-driven acidity and refined, tea-like character.

    This is a coffee that demonstrates how thoughtful innovation can deepen complexity without compromising purity.
