On the western foothills of the Andes, not far from Quito, lies Finca Meridiano — a small farm dedicated entirely to quality-driven coffee production. Here, producer Mario Hervas cultivates Typica Mejorado across a landscape shaped by mountain air, natural springs, and a balanced microclimate that allows the coffee to mature slowly and evenly.


Taste description: White florals, ripe watermelon, raspberry sweetness and honeysuckle with a long complex finish.

Typica Mejorado is a variety unique to Ecuador — a natural meeting point between Bourbon and Ethiopian landrace genetics. It carries the elegance of Bourbon together with the floral clarity often associated with Ethiopian varieties.


At Meridiano, the approach to processing is simple and deliberate. Ripe cherries are carefully hand selected before being pulped and dry-fermented for around twenty hours. The coffee is then washed with fresh spring water from the farm and slowly dried on raised beds inside protective polytunnels until the ideal moisture level is reached.


The result is a coffee defined by clarity, balance, and quiet complexity.


The Farm

Finca Meridiano began as a coffee project in 2011. Today the farm spans 25 hectares, with roughly 10 hectares dedicated to coffee. From the beginning, Mario Hervas has focused on producing exceptional lots, earning him a strong reputation among Ecuador’s quality-driven producers.


Natural water springs flow through the farm and provide the clean water used during processing. Combined with the relatively stable rainfall and humidity of this Andean foothill microclimate, the conditions allow the coffee trees to develop slowly — building sweetness and aromatic complexity in the cherries.


For now, Meridiano focuses exclusively on Typica Mejorado, with all seedlings originally propagated by Mario himself. In the coming years the farm will also begin producing Gesha and Pink Bourbon.
