Standout Signature Espresso is built around a fixed flavour blueprint. The farm may change. The producer may change. The harvest may change. The experience in the cup stays within the same structure.
Every lot we select must perform under pressure. We cup it as filter. We roast it with espresso as the main focus. We dial it in repeatedly before release. If it doesn’t hold clarity, sweetness, and structure at higher extractions, it doesn’t make it in.
The flavour profile
Expect a refined, floral-driven espresso with clear structure and layered sweetness. White florals lead the aromatics. Citrus brightness and yellow stone fruit bring energy and depth. The finish is clean and long, with a controlled acidity that carries through the entire sip.
Under milk, it stays defined. The florals soften, the sweetness deepens, and the structure remains intact.
This is competition-level coffee shaped for daily use.
How we build it
We source high-altitude washed lots from producers we trust, often Gesha and similar varieties known for clarity and precision. Each coffee is selected to match our blueprint. We adjust origin throughout the year to protect the profile in the cup, not to follow trends.

Roast philosophy
We roast Signature Espresso for clarity and repeatability. The goal is transparency and balance, never heaviness. We recommend resting the coffee for 12–18 days before dialing in. It tends to peak between week two and four post roast.

We like to run it slightly higher in yield to open up aromatics and push clarity. Adjust grind and ratio depending on your machine and preference, but this is our starting point.
