Two expressions from the same farm, same altitude, same variety. This bundle is about contrast, not comparison, and it lets you taste how processing alone can reshape the cup while everything else stays constant at Los Cipreses in Naranjo, West Valley, Costa Rica. Both coffees come from the Salazar family, grown at 1,650 masl and rooted in the same Milenio trees, yet they move in very different directions once picked.
The Honey Milenio is processed using a modern honey approach that keeps clarity front and center. It drinks bright and smooth, with sweet green apple and mature cherry up front, followed by soft nougat and red berry aromatics. The finish is long and sparkling, clean without feeling thin, and very precise in structure.
The Anaerobic Natural Milenio takes the same raw material and pushes it through a meticulous anaerobic fermentation before slow drying. The result is a silkier mouthfeel and deeper sweetness, leaning into ultra-ripe yellow and tropical fruit, lifted by floral notes that recall oolong tea and a juicy, citric acidity that keeps everything fresh and balanced.
This bundle is ideal if you enjoy tasting side by side, dialing in brews, or simply want to understand how far processing can stretch a single origin when farming and quality stay constant. Both coffees work beautifully as filter and competition-style espresso, and they sit right between specialty and competition coffee. If you’re curious about our roast approach or want guidance on brewing these two together, just leave a note at checkout and we’ll take it from there.
