We’re bringing back a coffee that means a lot to us. Our relationship with Jonathan Gasca goes back a few years, and our first real moment together was at World of Coffee in Greece. We had the chance to brew his coffee as espresso in the Slayer booth, and the response from everyone who tasted it still stays with us. That cup showed just how much potential Jonathan was shaping on his farm Zarza.
This new Pink Bourbon captures that same clarity and drive. Floral notes of rose and lily lift from the cup. Cantaloupe, sweet mango, and pink lemonade carry the profile. The finish has a clean riesling character that stays bright and firm as it cools.
Grown at 1800 m in Huila, this lot comes from Jonathan Gasca, a producer who has pushed Colombian processing forward for years. His double-fermentation and thermal-shock washed method gives this coffee its depth and structure. Ripe cherries are hand selected, oxidised, fermented, depulped, and taken through a second cycle before being quenched with hot and cold water to lock in the aromatics. Drying takes place on canopy for 10–12 days.
Jonathan’s path hasn’t been easy. Early processing experiments failed, buyers turned away, and he almost stopped trying. Friends from El Diviso and Las Flores encouraged him to start again, and once he did, everything changed. Today he’s one of the most respected names in Colombia, growing Pink Bourbon, Sidra Bourbon, Aji Bourbon, Pacamara, Gesha, Wush Wush, Caturra, Catuai, Castillo, and Colombia on his family farm.
