Process: Anaerobic Natural

Fermentation: 40h whole cherry + 20h in mucilage

Drying: 72h mechanical, 5 days additional mechanical, finished with 8 days sun drying

Taste description: This is a fruit-forward, balanced, and complex flavor profile. You’ll find a vibrant red and purple floral aroma.  In the cup there are tropical fruits like mango, and pineapple, stewed cherry, cocoa nib, and purple floral notes. It also features a balanced acidity and a lingering aftertaste, often with hints of lychee and spice. 




Backstory

This is the very coffee used by Carlos Medina to win the 2023 World Brewers Cup. A rare Sidra lot from Café Granja La Esperanza — pioneers of experimental processing and competition-grade lots. Rigoberto Herrera’s dedication to innovation is evident in every step, from fermentation design to final cup structure.


About the Farm

The Herrera family started growing coffee in 1945, planting Typica in small, carefully managed lots. Under the leadership of Rigoberto and Luis, Café Granja La Esperanza has become one of the most respected names in Colombian specialty coffee — producing award-winning lots like Cerro Azul Gesha and now this Sidra from Potosi. Their pursuit of excellence includes advanced fermentation techniques, in-house Q grading, and process development like the X.O. and Napoleon methods. This lot reflects decades of work and global recognition.
