Afterglow brings together two qualities we look for in exceptional Gesha: expressive fruit and a clear floral character. The natural process adds sweetness and depth, while allowing the variety’s elegance to remain at the centre of the cup.
It also offers a compelling perspective on Jamison Savage’s work. From a producer closely associated with advanced fermentation, this coffee puts the emphasis on exceptional cherries and carefully managed drying.
Why this coffee is significant
Morgan Estate holds a special place in Jamison’s story. It was here that he conducted some of his earliest experiments with carbonic maceration, an approach that would later become closely associated with Savage Coffees.
Afterglow explores a different expression of that same attention to detail. Whole cherries dry slowly, developing fruit intensity and sweetness while preserving the floral structure of Green Tip Gesha.
The cup experience
Afterglow opens with lifted white florals, followed by ripe strawberry, peach and red grape.
As the cup cools, the fruit becomes deeper and sweeter. A soft, champagne-like character adds lift, with creamy sweetness underneath. The result is a generous cup with richness, graceful structure and a lingering fruit finish.

Producer and place
Morgan Estate sits in a secluded valley outside Volcán, Chiriquí, at approximately 1,850–1,900 metres above sea level.
A river runs through the property, and mature native trees form a dense canopy above the coffee. Green Tip Gesha grows beneath this established shade in rich volcanic soils, surrounded by rainforest and abundant native plant and animal life.
This is the setting for Afterglow: a coffee shaped by its variety, its place and Jamison Savage’s meticulous approach to processing.
Processing and its effect on the cup
Only ripe Gesha cherries are selected and placed intact onto raised drying beds.
Jamison’s natural coffees dry slowly through a multi-level raised-bed system, moving through progressively cooler drying stages. Careful turning and monitoring help manage the process throughout.
Drying the coffee inside the whole cherry contributes to Afterglow’s ripe fruit character, rounded sweetness and generous texture. In the cup, that richness supports the Gesha florals without overwhelming them.

This is a suggested starting recipe for Afterglow; it has not been tested on this lot.

Method

Rinse the filter and add the ground coffee.

At 0:00, pour to 30 g, wetting all the grounds. Give the brewer a gentle swirl.

At 0:30, add another 30 g, bringing the total to 60 g.

At 1:00, pour slowly to 150 g.

At 1:40, pour to 250 g. Allow the water to drain with minimal additional agitation.
Taste the coffee as it cools. If the cup feels sharp or lacks sweetness, grind slightly finer. If the finish becomes dry or the fruit feels muted, try a slightly coarser grind.
Why these brewing choices suit the coffee
The two small bloom pours encourage even wetting before the main extraction. A moderate starting temperature and gentle pours aim to balance the natural process’s richness with the floral clarity of Gesha.
The 1:16.7 ratio leaves room for aromatic detail while retaining texture. The intended expression is a fragrant, fruit-driven cup with rounded sweetness and a clean finish.
Our recommendation
Choose Afterglow if you enjoy floral coffees with ripe fruit, generous sweetness and a little more texture.
Give it time to cool. The transition from lifted florals to deeper strawberry, peach and grape sweetness is part of its appeal.
