     That was when I really fell for Ethiopian naturals — and honestly, 15 years later, nothing has changed.This new lot from Shoondhisa in Shakiso, produced by Ture Waji, ticks every single box for me. It opens with delicate florals that flow into crisp, grape-like acidity. Juicy peach and ripe berries sit at the core, with a sweet citrus brightness tying it together. The mouthfeel is smooth and velvety, leaving a long, elegant finish that lingers beautifully.

    In the cup, Shoondhisa opens with delicate floral aromatics that carry into crisp, refreshing grape-like acidity. Layers of juicy peach and ripe mixed berries give the coffee a sweet and vibrant fruit core, balanced by a bright touch of sweet citrus. The mouthfeel is smooth and velvety, creating a lingering finish that ties the florals and fruit together with elegance.

    Backstory

    The Suke drying station, founded in 2017, has been central to Sookoo Coffee’s growth. Today it works with around 35 smallholder farmers, many cultivating tiny home garden plots. With limited infrastructure for processing, these farmers rely on Sookoo for quality-focused drying and fair compensation. All cherries are organically produced, ensuring both tradition and ecological care.
