    Process: Washed – Double Fermentation

    Fermentation: 140h whole cherry, then 120h in mucilage

    Drying: 10–12 days in greenhouse

    Orange blossom, jasmine, panela sweetness, tangerine, mature red cherries, long and sweet finish


    Backstory

    Teodolfo left Cauca in the late 90s in search of stability and built a life around coffee in Huila. With time, he transitioned from volume to quality. Today, he not only produces expressive microlots like this one, but also mentors others in the region.
