    Process: Double Washed – 20h dry fermentation, spring water washed, dried on raised beds in polytunnels


    Processing Details

    Cherries are carefully hand-selected when they arrive at the mill to ensure only fully ripe fruit is processed. The coffee is pulped and then dry fermented for 20 hours in small tanks at the farm. After fermentation, the parchment is washed thoroughly using clean spring water from natural sources on the farm. Drying takes place on raised African beds under polytunnels for gentle and even dehydration. Once the coffee reaches the right moisture level, it’s packed in GrainPro and stored in Quito until export. Everything about this process is precise, clean, and intentional.

    About the Farm

    Finca Meridiano was established in 2011 and is nestled on the western slopes of the Andes, just outside Quito. Of the 25 hectares, 10 are dedicated to coffee, and Mario has cultivated every tree from seed. The farm’s location gives it a unique edge — a cooler, less humid microclimate that allows for slow cherry maturation and stable processing conditions. Multiple natural springs on the property provide a consistent source of fresh water for washing, which is central to Mario’s clean cup approach. So far, the farm has focused entirely on Typica Mejorado, but Mario plans to introduce Gesha and Pink Bourbon in the coming seasons.
