At Finca Betania, she works closely with her team to refine harvest and processing practices, ensuring every lot expresses both terroir and varietal character.
Process Details
The SL28 is harvested at peak ripeness and carefully floated to remove defective cherries. The cherries are then depulped without water and left for a 48-hour dry fermentation, which develops depth and fruit complexity. After fermentation, the coffee is washed and transferred to a slow drying stage lasting 24 days, allowing sugars and acidity to stabilize. Finally, the beans are rested in bags for 10 days before being prepared for export. The result is a layered, fruit-driven cup with clarity and balance.
