    We selected this coffee because it shows the quiet side of great Pink Bourbon. Not loud, not heavily processed, but clean, floral and beautifully composed. It is the kind of Colombian coffee that reminds us how much character can come from careful farming, ripe cherry selection and a producer who understands restraint.

    In the cup, the profile is elegant, structured and transparent. White tea florals lead the way, followed by melon, honey sweetness and bright citrus acidity. A gentle note of pink grapefruit appears in the finish, giving the coffee lift and precision without taking away from its soft, silky texture.


    This Pink Bourbon comes from Juan Jimenez Peña and his wife Leidy at Finca El Porvenir in Santa Bárbara, Palestina, Huila. Palestina has become one of the defining regions of modern Colombian coffee, and Juan is one of its most respected producers, with consistent top placements in the prestigious Copa de Oro competition.


    At El Porvenir, a 16-hectare farm in the hills of Huila, the work is focused and exact. The cherries are selectively harvested at peak ripeness before being depulped, washed and dried slowly on raised beds for approximately twenty days. The result is a coffee with exceptional clarity, balance and transparency.


    At a time when many producers are moving toward increasingly complex processing methods, Juan’s approach feels especially important. This is a coffee defined by precision rather than intervention. Careful farming, clean processing and the natural quality of Pink Bourbon from Palestina are allowed to speak clearly.
